But the thing is, Ethiopians speak in a Semetic language (similar to Arabic).

My understanding is that the clicking languages are spoken by the native Khoisan tribes in places like Namibia and South Africa. Ethiopia is at the opposite end of the African continent. At first, I thought those clicking noises were the result of being so malnourished and bony.

True, but more like Hebrew. One African tribe that does use clicks is the !Kung of Southern Africa.
