If "n" is the number of episodes ever, then it should be n-1...

For a moment, let's consider the 'official' episodes.
x = n(official episodes)
There have been two episodes (Not Without My Anus and the Christmas Special) where Kenny has not died. So it's:
Number of Kenny deaths in official episodes = x-2
When we factor in the fanfics (which would take a *long* time), and the ones that Kenny's doesn't die in... we get:

Also, you forgot that he dies three times in Pink Eye and twice in City on the Edge of Forever (Flashbacks). I'm not sure about fanfics, but in the episodes on TV, Kenny has died 29 times.
