...but *what* exactly is Kevin?

Isn't there a song on the Chef Aid CD that explains this in detail? It's long, so I won't go into detail here. The song is near the end and I believe it's by Primus.

Kevin is the sperm of Michael Jackson combined with a human egg and brought to term in a llama.

The Kevin you are thinking about is either Mephesto's gopher boy with an angelic singing voice (Chef Aid album) or Mephesto's monkey friend (Cartman's Mom Is A Dirty Slut, though he doesn't look or move like a monkey). There are three - no, four - other Kevins, but they are human.
