I already know some of the charactors that Parker and Stone do the voices for (eg: Trey does Stan, Cartman, Mr. Garrison. Matt does Kyle, Kenny). Is there a more or less complete list of which charactors (including minor or recurring charactors) are voiced by whom?

I've never seen an official list, but there have been some pretty extensive ones on this newsgroup. Here's one posted a couple of years ago by Shpadoinkle:

I love and lust after Matt, but it has always struck me that Trey is the butch and Matt the bitch, Trey the star and Matt the sidekick, Trey the main event and Matt the Best Pal. I doubt their partnership would work as well otherwise, since (judging from interviews and such) it would be difficult to fit Trey's ego into the New Orleans Superdome. Fortunately for them and for us, Matt seems like the sort of easygoing guy who is perfectly OK with this.
