Actually, the post-game show doesn't last that long. However, you have to remember that prime time is over in the eastern half of the country by the time the post-game show even begins, so they're not going to show a Simpsons episode after the game.

As for The Simpsons not pre-empting baseball, the main reason is not ratings, but the contract Fox has with Major League Baseball. (Back when NBC had both baseball and football, they actually had to stop airing a football game that was in overtime so they could air a World Series game.) I assume this is why, when they had two games overlapping each other, the one that was just starting was on FX (rather than just joining it in progress) until the first one ended.
