If it has more than four legs, it's either some weird prehistoric animal, or some sort of alien animal. The fact that it is now extinct, without us ever being much familiar with it, indicates the animal was in limited supply.
My first guess was that it's some prehistoric animal, found frozen in the Antarctica (that might be a reason for the family to go to that continent, in search of the ribwich animal). I believe they have found frozen mammals, though I can't remember if anyone ate them, or that was a fictional account. So Krusty's staff discovers this source of meat, cooks it up (by processing it and moulding it, it's origins are disguised) and serves it. It's a success, but since this was a chance encounter, of course there is no steady supply, and the animal is long extinct.
The other possibility is they stumbled on some alien being or animal. Maybe fresh out of the space ship, maybe frozen in ice (as in The Thing). I think an alien form is more likely to have more than four legs. And again since this is in limited supply, it would soon become extinct, at least here on earth.
I discount the bug theory because I can't picture a large enough source of bugs, though admittedly they are pretty common. Maybe the ribwich isn't much meat, there used to be plenty of rumours about Harvey's filling their burgers with soy protein, but is mostly vegetable or grain. Throw in some ground up bugs, and there you go.

Maybe I am the only one, but I thought this was a joke about the urban legend from a few years ago concerning KFC. Does anyone remember this? The rumor was that Kentucky Fried Chicken changed their name to KFC because they technically could not call their products "chicken" because the company was using some genetically altered, lab produced chicken like mutant. This creation was supposed to be not really alive, but a multi-legged mass of meat that did not have legs, beaks, or feathers. It was only alive to be made into chicken products that would be large and juicy and easily processed. People started noticing the name change of the stores, as well as the fact that their commercials on TV/radio as well as the menu in the stores never used the word "chicken" to describe the product. They would use names like "The BBQ Wings" or "The Double Zinger". They never said "BBQ chicken wings" or "Double Zinger Chicken Sandwich". As I recall, the rumor became so popular, that KFC ran full-page ads in many large newspapers talking about the quality of their "chicken", while never actually addressing the rumors specifically.
That was my take when Homer and Otto asked if it was a pig or a cow and Krusty said they were "Way off". And that it was not important "who got rich off of whom" and "who was exposed to tainted what". Maybe I'm wrong, who knows. If you do not remember this urban legend, there are many urban legend sites that talk about it; here is one that I am familiar with:
