I have been waiting for this subject to be broached but so far no one's mentioned anything.
In the courtroom scene when What's-his-name is grilling Kramer he calls him 'Mr. Kramer'. Does this answer the question about Kramer's name? Or can we all decide that this does not answer anything.

Could be Kramer. As in Kramer Kramer. My brother actually knows somebody who was named George George George. Come to think of it, haven't I heard Jerry, on occasion, plaintively uttering, "Kramer Kramer Kramer"?

The answer is so simple it is a work of pure and utter genius.
Kramer is obviously both his first *and* last names. It's his middle name they have been keeping secret. With what we know about Seinfeld's penchant for using subtle referances to the rest of popular culture, his MIDDLE name becomes evident:
Kramer vs. Kramer. Right from that Hoffman movie of the same title a few (10?) years back.
I hope this sheds new light on the subject.

jerry's dad called kramer: "MR. KRAMER" -- does this solve the question?
answer: NO -- because of 2 anecdotes:
(1) My ex-roommate's wife calls him MR. ROB even though that is his first
name. my girlfriend calls me the english equivalent of MR. YOUNG-SUP,
my first name. yes; i'll agree that they never called us that in a
court of law.(2) Eartha Kitt (the tongue rrrrrrolling Catwoman on tv's batman) has a daughter named Kitt Shapiro (married name).
conclusion: anything's possible and it still doesn't really matter.
show's twist: when elaine's psychologist asked her if that was his first name or last name, i smiled...
