I've said before here I don't believe George was trying to say he was the first person to use that expression. For one thing he was speaking to Jerry who would have known outright that he was bullshitting him. I think the way he emphasises "invented" in the line "I invented it's-not-you-it's-me" suggests that he was merely alluding to the fact that he used it a lot and that it was his standard get-out-of-relationship line, not that he was the originator of that particular cliche.

You are right there, I think. It is like if something happens, and then the person says "XXX is my middle name". For example, person A might need a ride from the aiport, but does not trust person B to do it, fearing unreliability, and so B says Reliability is my middle name.
