As i lay trying to sleep last nite, an idea popped in my head. I think I may have stumbled upon how they came up with George's last name. Probably not, but it works out anyway. Consider the trigonometric functions Sine, Cosine, and Tangent. Sine is already used in Jerry's last name, so maybe they thought of that and came up with George's last name. Cos-Tan-za. I know it's really stupid and crazy, but you never know.. :)

Interesting theory, but Costanza is actually the last name of a real-life friend (I think it was one of Jerry's friends, right?) upon which George is somewhat based. George is a mix of Larry David and this Costanza guy.

Michael Costanza is his name...I believe...actually, in a 6 degrees of seperation way I'm related to him...my aunt's "life partner's" brother's children's mother (they never married) is cousin's with him...

The only thing George shares in common weith Mike Costanza is his last name. Larry David, who created the character of George, had never met the other Costanza.
See the HBO special, "Larry David: Curb your Enthusiasm" where Jason Alexander calls his George character a "shameless impersonation" of Larry David.
