Technically, he was the one who put the recipes in there in the first place. They were his recipes afterall. So somewhere in his mind, he knew they were in there when he gave it to Kramer.
Psychologically, perhaps he wanted to lose the recipes.

Anyway, if you fit the Soup Nazi in at the last supper, would he pass around the bread then charge each person $3 or just the one who is missed out and requests it?
