Fans discuss Lee Garlington, the waitress in the pilot episode who never appears again, speculating she was originally intended as a regular character and sharing her other acting credits.
Speaking of the pilot episode, I've noticed the name Lee Garlington or Garvington in the opening credits of that one (following, of course, Jerry Seinfeld, Michael Richards, and Jason Alexander).
Who could that be? That cutie waitress? ("Regular right, decaf left. It's very challenging work . . . .") Can't be: She was a non-recurring character.
Yes that is her, the waitress, who disappeared after that pilot episode! Obviously many changes brought in after that episode.

perhaps in first drafts of the show she was signed to be a regular, after all they always come to same Monks restaurants, why wouldnt be there a friendly sarcastic waitress perfectly sitting to the rest of them? - and dont you find it surprising there are no regular waitresses in Monks over so many years? dont forget that "Seinfeld Chronicles" pilot was aired year before the series really started (perhaps "Jerry" show's story is based on a history of the "Seinfeld" show), and god knows how much earlier it was written and shot.

The cook is recurring. He complains about the use of outside dressing, and other times they have come over to their table. Once to tell Kramer to stop smoking. Another time I remember was when "I got a message for your friend, George..." in reference to tell him to stop calling there.
I also notice the woman behind the counter, Ruth(?) has been there in more than one show.

Carl has a line in "The Foundation". Jerry is asking the waitresses on what they think about the scenario's he can tell to new girlfriends concerning his fiancee. In that scene Carl says something like "is this over now?"

Oh c'mon! His best moment was in "The Outing". While Jerry and George are having something like a domestic spat in Monk's, he walks over to their table, leans on his fists,and says something like, "if you boys can't control yourselves, I'm gonna have to ask you to leave." Chilling moment indeed!
