What is pakiderm? who is pakiderm? what is so funny about pakiderm? how do you spell pakiderm?

It was used in the Stand-In in the 5th season. I beleive it was a nickname of a guy named Jerry Pershack (not sure about the spelling). Through the show a joke is told about JP involving two peices of pizza.

The pachyderm refference is from The Stand-In episode in the 5th season.

I beleive it is a Jerry joke that all his friends find hilarious. Jerry uses the Pachyderm joke on Fullton& I can't recall if it does not go over well or if it is the joke that kills Fulton. The actual joke is about a mutual firend of the gang- Jerry Pershack (nick named Pachyderm) and a very hot pizza or a pizza that was dropped. I hope this information helps.

Not to quibble but it isn't a "joke". Jerry's or otherwise. It's an amusing real-life anecdote that as you say involved Pachyderm and two pieces of pizza. It's told (or referred to) frequently during in the episode (although never so the viewer knows what was so funny about it): Jerry tells it to Fulton without response (it's on a later occasion when he makes Fulton laugh himself to death), Elaine tells it to her date - with much hilarity. At the end of the show, George's girlfriend reveals that she was present in the restaurant when the "crazy mishap" occurred and ended up as a result meeting and beginning a relationship with Pachyderm.

(All that's from memory but I'm fairly sure of it)
