George's mother was making plenty of it for the Seinfelds in "The Raincoat" (I think that was the ep), however, no one seems to know what it is. Can one of you kind people enlighten me?

Well, it's a melange of fish and meat with rice. (Isn't that how George described it?)
I thought the subject said "Papaya"! Estelle was actually making "paella", a Spanish dish described by Kramer as an "orgiastic feast for the senses".

Errr....are you sure it wasn't Paella??? i.e. Spanish fish/meat/rice dish.

It's not soup. It's like a seafood stew on a bed of rice. Takes a while to prepare, but it's worth the effort!

I am pretty sure that paella it is a Spanish rice dish (with various other things (veggies, etc.) mixed in...I also think that it is "yellow" rice (saffron)).
Paella (sp?) is a Spanish dish that consists of rice, shell fish, vegetables and sometimes red meats such as sausage. (I don't know if the sausage is a traditional ingredient or not). It is flavored primarily with saffron which also gives it a yellow color. It's really yummy.

That episode made me look up the recipe, for paella...
Basically, it is comprised of:
3-5 lb chicken, onion, garlic,butter, rice,saffron,chicken broth,1lb shrimp, 12 slices Italian sausage, and 2 doz cherrystone clams
