The actor was John Randolph, a very fine stage and film actor. He played Chevy Chase's father in "National Lampoon Christmas Vacation". I don't think he would have fit into the Seinfeld motif as well as Jerry Stiller did., but not known for comedy. Reshooting those short scenes for the syndication wouldn't have been a big problem.
