Why, in the opening credits do Jerry, Elaine and Kramer have their real names listed and nothing else whereas for George it says "and Jason Alexander as George".

Its a fairly standard thing for the second "ranking" actor to stand out from the rest of the actors by having a "as" designation. Just as movie stars fight to get their name ahead of the title, there is usually a bit of an order of merit for TV stars. In this case, obviously Seinfeld is the main star but Jason Alexander had enough of an acting pedigree to differentiate himself from the other two.
Nope. Jason's character is listed because his name is last in the opening credits. Standard procedure. Julia and Michael were both credited television actors at the start of the series, and weren't any less-known than Jason in the world of TV.

Yes, but why is Jason name last in the credits? It's obviously because he wanted to be last to get that standard "as" tag to stand out, just as Yossarian said.
