I just think he wants to keep his soup recipes secret. That's why he was so pissed at Elaine when she found them in the armoire. If I knew Julia's email address I'd write to her and ask for some copies of them.
Well, I'm not as secretive as your so-called "friend". Here is my recipe for fish chowder:
Put a big spoonful of Crisco in the bottom of a big soup pan. Let it melt. Add chopped onions (1 large) Add cubed potatoes (4-5 large) Let these cook for a few minutes, until onions are translucent and potatoes are just starting to get soft.
Add fresh white fish - haddock is best, without skins. Don't break it up, just lay it on top. You need a lot so 3 plus pounds is best. If you don't use enough fish it comes out weak. You can make a smaller amount, just halve everything.
Add water...just barely cover the fish with water. (you can also add some canned clam juice or fish broth if desired and if you can find it)
Let simmer 20 minutes or until fish is just starting to fall apart and potatoes are cooked. Don't boil, and don't let the fish disintegrate.
Add a couple of cans of evaporated milk and let it heat through for another 5-10 min. Stir gently. Don't let the fish break up too much...you want big hunks.
Serve with fresh italian bread and butter.

He had to close down his New York shop when his recipes were published.

PS. Does anyone have the recipe for the wild mushroom? I know it starts with 5 cups chopped Porcine mushrooms, half a cup of olive oil, 3 pounds of celery, chopped parsley....
