At the end of the show, George Elaine and Jerry are outside the building in front of a market. Behind them you can see a red Coca Cola sign, the two "C"s are covered up.
I was wondering why, we all know its a Coca Cola sign....

I have seen that occur on other TV shows, with different products. Maybe the producers of the show don't want to give free advertising or imply that the company is paying to have their product in the show.

There's an episode in which Kramer is talking from his doorway to Jerry in the hall, and he's clearly holding a Pepsi can with an unobscured logo. It appears and disappears as the camera angles change, a mistake I'm guessing, but it's clear nonetheless. Perhaps they thought a full Coke logo would anger their sponsor. Or something.

I can agree with that, but how about in The Dinner Party, George doesn't say "I drink cola", he says "I drink Pepsi", or Jerry and Elaine in The English Patient talking about "his Pepsi girlfriend". Sometimes they don't even try to make it less obvious.
