I have sent Wayne (Mr. Knight) some mail and he was kind enough to reply. I asked him why they don't put the episode titles on screen. He said he would pass it along to the powers that be, but thought they did it just to keep us hard core fans interested.
I was really impressed that he took the time to respond.
