OK, I know Elaine was not in the pilot, and Kramer was not in The Chinese Rest., but which episode(s) did George miss?

Well, Elaine not being in the pilot doesn't really count.....Elaine was not in "The Trip" for example. Kramer was not in "The Chinese Restaurant" and George and Kramer were not in "The Pen"......
