But soylent green is not a Futurama reference; it's a reference to a movie of the same name (starring Charlton Heston).

But that means there is a fictional universe within the Simpsons/Futurama universe, one where Homer and co. live at Evergreen terrace next to a certain Mr. Flanders, their adventures seen every week my millions on TV, but played by actors with the same names who are celebrities and plagued by papparazzi (sp) when off the set.

Is that good, or are the logic holes/contradictions in there somewhere? :-)

I'm not sure of your logic. I think the Official Story is that Futurama is _real_ (just in the future), but Simpsons is fiction. (Hence the yellow skin.) That easily explains the Simpsons bits on Futurama.

Futurama doesn't need to be fiction to show up _in_ fiction, though. If fiction weren't allowed to reference reality, all we'd be left with is weird surrealist abstract art that no one can understand.

Perhaps, in the Simpsons' universe, they've never shown the episodes of Futurama that mentioned "The Simpsons" as fictional. The two worlds definitely don't exist within the same continuity, though.
