I would think, because her eye is so big, and can absorb alot of light, she would have terrific telescopic vision, (which would proabably enhance her bad depth perception); she could see more distant object than other people could, but have difficulty telling how far away they are.
Also, she would probably be more sensitive to dust, pollen etc, as anyone would be with a mucus membrane the size of a dinner platter.

Well, first of all, no one can "see" in outer space...at least not in any way that would help you pilot a space ship...it's not like you could look out the window and see the stars going by. All that data obviously needs to come in through sensors...and didn't Star Trek build a foundation of simplicity on these two words: "Sensors indicate...."?
Second, Leela is an alien. Her eye may not function the same way as a human eye. Perhaps her one eye can see nine dimensions where two human eyes can only perceive three. We just don't know.
Thirdly (and my favorite, because it was used on me with great accuracy), BECAUSE THE SCRIPT SAYS SO.
