I'm just re-watching season 8, and although Ross is probably the most ridiculous character on the show, one episode made him stand out in every aspect.
The moment I'm talking about is when he counsels Joey to act on his rachel-crush in TOW Joey tells Rachel.
This is a moment that makes me understand why Rachel would fall in love with him.
Are there any other outstanding scenes where Ross is acting like a great person (as opposed to the jerk he is lately written to be)?
Not a great person... but the most hilarous scene I think is when he is wearing the leather pants and cant get them back on in his date's bathroom. Everytime I think about that scene I just start cracking up.

I've watched all eppies up to last week's one and I like Ross fine. LOL. He seems like a bit of a wuss, and maybe a little kooky and bad tempered sometimes but also a very kind, caring kind of person. Two moments other than the joey moment you mentioned where Ross is portrayed as a nice guy that I can think off the top of my head are 1) in maybe Season 2, Monica bangs Ben's head on the ceiling. Rachel confesses, and Ross says "you did the best you could" or something like that and kisses Rachel. Maybe it was bad characterization, but most new parents are very sensitive about their children. I thought it was really nice of Ross to act so good humored about it. LOL. 2) in Season 8, he wouldn't tell the others in the beginning that it was Rachel who had come onto him. Of course, he DID accidentally tape them doing you-know-what, but I thought it was very kind of Ross not to give away the entire thing. LOL. Of course, I am aware that the whole seduction and dry spell thing is a sensitive issue with Ross. ROFL.
Most of season 1, much of season 2 and some of season 3 (e.g. tiny T-shirt). Most of the following single occasions have been listed already. He was also the only grown-up in the season 8 finale.
I think one of his best moments was in one of the lousiest episodes ever, TOW the Cat, and the scene also reveals that the writers don't care much for the Ross' character: He is the only one who confronts Phoebe with the fact that the cat she thinks is her mother is actually missed by a little girl And what do the writers do: They let Phoebe off with some stupid off the point :Ho many parents how you lost, Ross" remark and it all ends up with him apologizing! My god, he didn't deserve that!!!!!
