so how old is everyone on the show?
Joey was 31 in season 6. so when they were having the 30th bday party for Rachel, he'd be 32?
Who'd be older Joey or Ross??
Rachel seems to be the youngest of the lot.

Here is what I think:
Monica and Rachel went to high school together so they are probably the same age (Monica is a few months older than Rachel). Chandler and Ross were room-mates at college and are probably the same age. Ross is about a year or year and a half older than Monica (when he was in the first year of college, Monica was in her last year of high school). Joey could be about 32 and Phoebe is 31 (we know that from TOW Rachel's birthday party). I agree that Rachel is the youngest among them.
So it could be:
Ross 32 Joey 32 Chandler 31,5 - 32 Phoebe 31 Monica 30,5 Rachel 30

but i think the writers have made an error somewhere so it can't turn out any way that would fit

You haven't done too badly, but you haven't allowed for the fact that the girls had their ages revised, but the boys didn't. (Phoebe got older).
Actually Danny, Chandler is definitely younger than Joey.
The best we can say right now is that their birthdates are as follows...
Phoebe ..... 16th February 1967
Ross ....... 20th October 1967
Joey ........ 8th January 1968
Chandler ... 25th April 1969
Monica ..... 14th July 1970
Rachel ...... 8th February 1971..if anyone wants to know all the reasoning & evidence behind this, let me know and you can have a copy of the spreadsheet.

You are forgetting that only Rachel's birthday took place in the present, and all the others were flashbacks. Monica's birthday was incorrectly set since it was during her engagement, but for all the others the redressed sets, hairstyles & costumes fitted in with their established ages.
For example, Phoebe's 30th birthday (when she discovered she was 31), should have been set near the middle of Season 4, and if you look carefully Monica is wearing the same dress she wore in S4-01.
Unfortunately for Joey & Phoebe fans, that means the much publicised big kiss was totally irrelevant to future prospects for the couple.
