If they wrote that in then the production team would have an even bigger deathwish than I give them credit for.

Too much has been built into Chandler as a hetero having to deal with people who meet him automatically thinking he's gay. There would be no shock value, and instead of making him funnier, he would be much less funny. No longer would he be neurotic about his masculinity (or perceived lack of).
