During the credits, they played a medieval-sounding instrumental version of the theme (on a lute and lire). Another one for the "credit extras missed on Fox airings" list, I suppose. :-)

This is true for almost all series on all the broadcast networks. Closing themes aren't heard until the series goes into reruns on cable networks (but still interrupted) and on DVDs. And scenes during the closing credits on sitcoms are often skipped during the summer so the networks can show ads for new series.
